Having Cade has made the Holidays so much fun this year! When I was pregnant I ate 80% gluten free/vegan to maintain my weight and eat as healthy as possible. These Pancakes were a Sunday staple. It’s been hard to find the time to make them again since Cade has been born. A shopping trip to Sur La Table where we found these Gingerbread Pancake molds changed everything! A fun way to be festive, guilt free!
1 package of cup 4 cup pancake mix
3 ripe bananas
1 cup of almond, coconut, or soy milk
1 teaspoon cinnamon
1 teaspoon vanilla extract
Coconut Oil to grease the pan
1. Combine pancake mix, bananas, milk, cinnamon, and vanilla in a mixer.
2. Heat your pan on stovetop and coat lightly with coconut oil.
3. Use a spoon to make desired size pancake.
4. I turn the oven on low to keep the pancakes warm as I cook them.
