I’ve been posting a few quick recipes on Instagram so wanted to gather them into one place! These are some of SunshineFIT’s latest healthy creations!
Summer Cucumber Salad
The perfect summer side! Soak Sliced cucumbers, cherry tomatoes, red onions, and a pinch of pepper in your favorite vinegar overnight. I used Cabernet Sauvignon Vinegar from Long Meadow Ranch. Before serving toss with garbanzo beans. Delicious, healthy, and easy!
Easy Gluten Free Pasta and Veggies
Quinoa spaghetti tossed with sautéed spinach, broccoli, and artichoke. Top with a drizzle of olive oil, pepper, and the juice of a lemon, combine and serve.
SunshineFIT Lemon Vinaigrette
Boil potatoes in water. Strain. Line a cookie sheet with foil. Put potatoes on sheet and smash each one with bottom of coffee mug. Use a brush to paint olive oil and herbs on each. Bake on high heat till slightly crispy on outside.
Skillet granola is so easy to make! Coat your skillet with coconut oil, use medium heat, add 1/2 cup oats, handful of almonds, sunflower seeds, ground flax, a little bit of pure maple syrup, a touch of vanilla extract, a few shakes of cinnamon. Stir frequently to combine and so it doesn’t burn. Cooks in 5-7 minutes. Put in bowl and let cool a bit. Top with coconut milk, yogurt, and fruit!
