Happy Memorial Day Recipe and Week In Review!

Happy Memorial Day! Thank you to all who have sacrificed to give us our freedom. Enjoy all your celebrations today! Here is an easy last-minute recipe if you need something for your BBQ!

J.B.’s Picnic Potato Salad (Gluten Free and Vegan)

*makes 4 servings

1 pound of fingerling potatoes

1 teaspoon of white vinegar

Quarter potatoes then boil to soft. Once boiled, drain water, and sprinkle about 1 teaspoon of white vinegar on top and place in frig to cool.

The dressing:

In a bowl combine: 1/2 cup of whole grain mustard (or dijon mustard), 1 tablespoon of honey, pinch of red pepper flake, 1 finely diced clove of garlic, pinch of salt and pepper. Whisk together and then slowly add 1/4 cup of good Olive oil while you continue to whisk.

Pour the dressing over the cooled potatoes and toss till coated. Add a sprinkle of chopped scallions for presentation. Can be served right away or chilled and served later!

Short recap of my #sharesomethinginspiring first week.

The challenge started with tweeting something that motivates me. For as long as I can remember my favorite quote has been, “Live Well, Laugh Often, Love Much.” It’s my daily mantra. Everyday is a new day that can be filled with ups and/or downs. This quote reminds me to take part in our life and what happens to us instead of waiting for life to happen to you. Laugh about the good and even the bad. Above all else remember that nothing matters without love.

Day Two was to #sharesomethinginspiring to someone who needs it. It was also Friday and the end of a work week, the beginning of a long weekend! My post was about forgetting real life and enjoying the time off!

Day Three was to #sharesomethinginspiring about your best friend. This was an easy one. My best friend Kim’s journey through weight loss is something that continues to inspire me. She was a guest on my blog a little while back. Read her amazing story here. 

Day four’s challenge topic was #sharesomethinginspiring that makes me smile. Many things make me smile. But recently J.B. and I were in Key West for vacation and to plan our wedding for next year. It was so exciting and we picked our wedding ceremony spot. This spot is what makes me smile! How could it not?
