This is my first ever attempt at homemade granola and it turned out, well, BOMBDIGITY! I even did a little yummy granola dance! It’s gluten-free and full of good fats, protein, and even flaxseed. Adjust the nuts you use if you prefer others!
This makes A LOT! I’d say at least two weeks worth if you are eating it everyday.
1 cup of Organic Maple Syrup
1/2 cup of Brown Sugar
2 teaspoons on cinnamon
2 teaspoons of vanilla
2 cups of oats
1 cup of pecans, chopped
1 cup of walnuts, chopped
1/2 cup pumpkin seeds, roasted
1/2 cup ground flaxseed
1. Preheat oven to 350 degrees. Grease a cookie sheet.
2. Add the sugar, syrup, vanilla, and cinnamon on a pot on low heat and whisk till sugar dissolves.
3. Combine Oats, nuts, and all seeds into a big bowl. Pour the syrup mixture over the oat mixture and stir until combined and coated.
4. Spread the mixture on to your greased baking sheet. Put in over for 25-30 minutes until it browns. Once out of the oven let cool completely before putting into an airtight container.
