Super Simple Quinoa Salad
*makes enough for 2 as a side or 1 as an entree
2 cups of arugula/spinach mix
1/2 cup cooked quinoa
1/4 walnuts roughly chopped
1/4 cup red onion diced or sliced
1/4 cup strawberries diced
1/3 cup soft goat cheese
Pepper to taste
1/2 an avocado sliced
Juice of one lemon
1 tablespoon of extra virgin olive oil
Combine all ingredients in bowl and toss. Serve.
