Organic and Gluten Free Blueberry Oat Bread

After an episode of Giada making a blueberry banana bread this morning I was inspired. Then a trip to the market and a pint of fresh, organic blueberries solidified the deal. This recipe is a combo of a few recipes I found on the internet and the ingredients we actually had in the cupboard. Yes, we had coconut oil and coconut milk (thank you Christi Matson!).

Dry Ingredients:

2 cups of “Cup 4 Cup Flour” (Williams Sonoma sells this, it’s a fabulous staple to have and GLUTEN FREE!)

1 cup of oats

2 teaspoons of baking powder

1/2 teaspoon on cinnamon

1/2 cup of organic sugar

1/4 teaspoon of salt

Wet Ingredients:

3/4 cup of coconut milk

2 organic eggs

1/2 cup of melted coconut oil

2 cups of organic blueberries

*heat oven to 350 degrees

1. Combine all dry ingredients in a mixing bowl.

2. Add all wet ingredients and mix on low.

3. Fold in Blueberries to the mixture.

4. Pour mixture into oiled and floured bread pans. Cook at 350 degrees for 50- 60 minutes or until toothpick pulls out clear.
