*Makes 6, 6 inch (small tacos)
6 Corn Tortillas
1/2 cup of grape tomatoes, sliced in half
1/4 cup of hot peppers (optional)
1/2 cup of broccoli florets
1/2 cup red pepper, diced
1/2 cup of zucchini, sliced into half moons
1/4 cup of red onions, diced
1/2 cup of low-fat grated mexican cheese (combo of cheddar and jack)
For the Guacamole
3 avocado, smashed
1/3 cup of red onion, diced
1/3 cup of cilantro taken off stems
1/3 cup of tomato diced
pinch of salt and pepper
1. Put all ingredients for guacamole in a bowl and mix together until the avocado is smooth. Set aside.
2. In a large saute pan- 1 tablespoon of olive oil. Add the zucchini and onions first, saute to lightly browned. Add the red pepper and broccoli, saute till tender. Add the grape tomatoes. Saute all together about 5-8 minutes. Season with salt and pepper.
3. Follow directions on back of taco package to heat.
4. To assemble taco: Start with a layer of shredded cheese, add the veggies, top with guacamole.
