Need an alternative to Green Bean Casserole? Citrus Haricot Verts in your answer! The main ingredient is green beans which is a great source of Vitamin A to protect against diseases. The orange zest brightens the flavors in the dish and helps to protect against cancers, high blood pressure, and has loads of Vitamin C to boost your immune system.
2 big handful of fresh Green Beans, end cut off
1 Yellow Pepper, sliced into strips
1 cup of Spinach
2 Shallots, thinly sliced
1/2 cup of Grape tomatoes
Zest of one full orange
Juice of one full orange
1 tablespoon of balsamic vinegar
Salt and Pepper
1. Blanche Green beans in boiling water for about 2 minutes then set aside.
2. In a large saute pan add about a 1 tablespoon of olive oil, yellow pepper, and shallots. Saute 2-3 minutes to let peppers soften.
3. Add green beans, cherry tomatoes, and spinach to the large saute pan, mix all together. Add a pinch of salt and pepper. Saute 2-3 minutes.
4. Add juice of orange and balsamic vinegar to the saute pan, mix well. Let liquid reduce then turn off the heat. Add the orange zest, stir. Serve!
