Spinach, White Beans, and Asparagus Side Salad
1/2 cup of Canellini Beans
1 bunch of Asparagus, spears only
2 cups of fresh Spinach
2 Shallots, diced
2 cloves of garlic, diced or pressed
Juice of 1 lemon, in a separate bowl
1. In a saute pan heat olive oil, shallots, and garlic. Once it softens, add the asparagus spears and half the lemon juice. Season with salt and pepper and saute.
2. Add the beans to the saute pan, season. Stir with a wooden spoon to combine ingredients and cook. Turn heat down and add handfuls of spinach, tossing as it cooks down. Add remaining lemon juice.
Serve and enjoy!
