Summer Tomatoes with Garlic, Broccoli Rabe and Beans Salad

These are two simple recipes that easily serve as a healthy meal or separate sides! Each recipe makes about 2 servings.


Summer Tomatoes with Garlic

Ingredients:

4 Heirloom Tomatoes, Sliced

3 cloves of garlic, pushed through a garlic press

1/8 cup of Olive Oil

1 teaspoon Red Pepper Flake

Salt/Pepper

1. Combine garlic and olive oil in a bowl, add red pepper flake, a pinch of salt and pepper. Whisk together and let set for about 30 minutes.

2. Arrange tomatoes on a plate. Sprinkle lightly with salt and pepper. Spread the garlic mixture evenly on top of each tomato. Serve!

Broccoli Rabe and Bean Salad

Ingredients:

1/2 cup of arugula

1/4 cup of Roasted Red Peppers cut into strips (see recipe here)

1/2 cup of Broccoli Rabe with most stems removed

1/2 cup of Cannelini Beans

Half of Lemon

Salt and Pepper

1. Heat 1 tablespoon on olive oil and add broccoli rabe. As broccoli rabe cooks and softens, reduce heat and add cannelini beans. Squeeze in half a lemon, season with salt and pepper. Add roasted red pepper strips.

2. Arrange Arugula on plate. Top with broccoli rabe mixture.
