Summer Sun Gazpacho


1 pound of red ripe tomatoes, chopped

2 cups of tomato juice, unsalted if possible

1 cucumber with skin on, chopped

1 red pepper, chopped

1 yellow pepper, chopped

1 red onion, chopped

1 jalapeno, chopped (optional, take out seeds for less heat)

2 cloves of garlic, chopped

salt and pepper to taste

2 tablespoons of Olive oil

a bunch of green onions, chopped

Combine all ingredients in a food processor and mix till blended with slight chunks. Serve with green onions sprinkled on top.
