Tomato and mozzarella

Nothing says summer like fresh tomatoes! This is a basic recipe that always impresses!

1. Use two tomatoes per person and one ounce of mozzarella per person.

2. Lay out a bed of arugula. Places alternating sliced of tomato and mozzarella on top of arugula. Sprinkle with salt, pepper, balsamic, olive oil and basil.
