Sunday was the 75th anniversary celebration of the amazing Golden Gate Bridge. Every time I see the bridge I am in awe. I am truly lucky to be able to see it every morning on my walk to work. Jb made this delicious salsa on Sunday night that we decided to call Golden Gate salsa in honor of the days festivities.
* makes 4-6 side servings
1 pineapple, diced
1 red onion, diced
1 jalapeño, de-seeded and diced
2 roasted red peppers, diced
4 ears if corn with kernels sliced off
2 avocado, diced
1 cup of fresh cilantro
1 cup of cherry tomatoes
Salt/ Pepper to taste
1. In a sauté pan combine about a tablespoon of olive with corn, onion, cherry tomatoes and cook till corn is done.
2. Combine the rest of ingredients in a bowl and add cooked ingredients. Mix well.
This salsa can be served hot or cold. It’s delicious with tortilla chips or great all by itself or as a side to your meal. Great for summer barbecues or lunch on a hot day!
