Italia Pita Directions

2 whole wheat pitas, sliced in half

1 cup of cherry tomatoes, sautéed in 1 tablespoon olive oil with salt and pepper till skin is just about to burst

2 red peppers roasted and peeled (see directions below)

1/4 cup fresh basil, torn off the stem

12 slices of fresh mozzarella (about 1/2 cup)

Balsamic Vinegar

To Build Italia Pita:

1. Take Half of Pita and put 3 slices of mozzarella on bottom. A few Basil leaves on top. Add a few strips of Roasted Red Pepper. Spoon a layer of Cherry Tomatoes next. Put on the baking sheet that is lined with foil and bake at 350 degrees for about 5 minutes to melt cheese. Sprinkle Balsamic Vinegar with a spoon.

To Roast Red Peppers:

1. Spray peppers with olive oil spray and put on a baking sheet lined with foil. Put in oven at BROIL and rotate as skin starts to blister/blacken/peel.

2. Once red peppers are done all the way around put into a BROWN PAPER BAG and fold down to let them steam for at least 10 minutes to cool.

3. Remove peppers from the bag and split open the pepper with a knife over the sink to drain the water. Then de-seed on a cutting board and peel away skin. Cut into long strips.
