Healthy on the Cheap- Day 4

It’s April 1st. I love new months. It’s a chance to re-motivate, check in with your goals, maybe take on a new project. Think of it as a way to start fresh!

The only additional item to add to your shopping list today is Potatoes. Potatoes are cheap and versatile, loaded with fiber and antioxidants.

Healthy on the Cheap Meals Day 4

Breakfast: Whole Wheat Tortilla with 1 tablespoon on peanut butter spread evenly and a sliced apple

Lunch: Whole Wheat Bagel thin with sliced avocado, sliced tomato, red onion, and sliced chicken (optional)

Snack: 1/4 cup of oatmeal with cinnamon, agave nectar, and a small handful of almonds.

Dinner: Oven Potatoes (Recipe is below), steamed broccoli and carrots with 1 tablespoon of pine nuts, sautéed chicken (optional)

Sunshine’s Oven Potatoes- This is one of my favorite recipes! It satisfies the carb fix and also is a healthy alternative to french fries. Kids will LOVE them and so will you!

1 Potato per 2 people

Pam Olive Oil Spray

Salt and Pepper to Taste

1. Heat oven to 400 degrees. Line a baking sheet with aluminium foil and spray with Pam.

2. Slice potato in half lengthwise then in half-moon shapes about  1/4 inch thick. Put potatoes in a n even layer on baking sheet and spray with Pam. Season with salt and pepper.

* We’ve also made these with Montreal Seasoning or Garlic Powder. Have fun with it!!!
