Eat Clean, Drink Clean Day 5- Cooking from Scratch

Okay, I admit it. I really don’t cook. Well, I mean, I’m not the main cook, I like to cook, and sometimes I do, but mostly…well mostly, I don’t. JB is a fabulous cook and so, why not leave the heavy cooking to him?

I make amazing stuffed shells, banana bread,  and vegetarian chili that I’m pretty sure could win awards but beyond that I’m pretty basic. So, this morning when I decided today would be the day that I would make pancakes for the first time ever from scratch, lets just say I was skeptical. Boy, was I was so wrong! My pancakes were out of this world! I took a recipe I found on The Gracious Pantry and then kind of made it my own only because we didn’t have everything she did in her pantry. Props to her though because she was my inspiration. I added a few bananas, strawberries, and almonds, and before I knew it the PERFECT pancake breakfast popped up.

Cooking from scratch made me feel good. It gave me something to focus on to avoid the temptation of going out for brunch. Instead, we had a healthy, wholesome breakfast that I was proud of!

Sunshine Breakfast Pancakes

1.5 cups of whole wheat flour

1 teaspoon of baking soda

2 egg whites

1 whole egg

2 cups of vanilla almond milk

1 tablespoon of agave nectar

1 tablespoon of cinnamon

1. Blend all ingredients together.

2. Heat a non-stick pan and ladle batter on about 1/4 cup or a ladle per pancake. I heat the oven and keep the pancakes warm as I am cooking.

3. Serve with a sliced banana, strawberries, and almonds.

Eat Clean, Drink Clean Day 5 Happenings…..

Meal 1- 9am- 3 Whole Wheat Pancakes, half a banana, 1/cup strawberries, 10 almonds

Workout- 40 minutes kickboxing, 20 minutes of yoga

Meal 2- 2pm- 2 ounces of organic jalapeno cheese, 6 wheat thins, 1/4 cup of home-made gnocci. 3 glasses of red wine. This meal was at a graduation party and I was talking and celebrating my friend 🙂

Meal 3- 4pm 1/2 burrito with pinto beans, guacamole, red onion, whole wheat tortilla. 1 skinny margarita.

Meal 4- 7pm  Salad of lettuce and 1/4 cup each off carrots, cherry tomatoes, broccoli, quinoa, red onion, corn, roasted peppers. 2 tablespoons of balsamic vinegar.

I had 37 points (eek!) of the 26 I’m allotted. I gained 7 points in activity which puts me at 30 points for the day. That is still 4 points over my allotted.
