Meatless Monday Recipe: “Better than Garlic Bread” Bruschetta!

Bruschetta is quite possibly one of my favorites. Warm, toasted bread with a delicious topping along with a glass of wine or champagne is a great little indulgence that still can be healthy if you pick the right ingredients!

JB made this delicious bruschetta in preparation for my girlfriends coming out in February. He wanted to “try the recipe” to make sure it was perfect! It was better than perfect, hence the name I came up with as I was enjoying every bite!

“Better then Garlic Bread” Bruschetta!
One whole bulb of garlic- take out each clove and peel
1/4 cup of olive oil
1 tablespoon of fresh oregano, chopped (Mexican if you have it!)
Pepper
Baguette- sliced 


1. Preheat oven to 400 degrees. 
2. In an oven safe bowl combine olive oil and oregano, add a pinch of fresh pepper. Then add garlic cloves and coat with mixture. Bake for 20- 30 minutes, until garlic is soft.
3. Brush each slice of baguette with olive oil and toast both sides in the oven. 
4. Top bread slices with garlic cloves and enjoy!!!
